A paleo inspired Italian bed and breakfast where the ingredients are harvested straight from the picturesque surrounding natural environment sounds like an incredible concept that would make for a prime vacation destination.
Well, that’s everyday life for Stella Rossi, owner of the ValdericArte Bed & Breakfast and founder of the Paleo Italia Association. During my travels in Italy, I was fortunate enough to catch up with Stella and learn more about her story and outlook.
Her popular BnB features incredible paleo dishes and recipes that cannot be found anywhere else, and they will often forage in the neighboring forest for much of the ingredients. It’s not just about food with Stella, ValdericArte is a creative residence where you can relax and let yourself be inspired by the art that dwells in the residence. Her patrons often rave about the beauty of the surrounding landscape, their experiences related to art and nature, and the numerous art and cultural activities offered.
The “paleo” style proposed in this marvelous oasis goes beyond food to also include so much more. Their website mentions incorporating the following elements to create a unique an amazing experience for their visitors; sports, customs, science, history, archeology, art, culture, health, medicine, nature, herbs, wellbeing, agriculture, breeding, tourism, and creativity.

Vivica has worked in a nutritional clinical practice of 4 years, coaching countless patients through detoxes and lifestyle changes.
In 2014 after her discovery of being pre-diabetic, she created a local ketogenic diet program to help people who were heading towards diabetes and obesity.
This program eventually developed into The Healing Foods Method. Vivica keeps teaching her course locally in addition to a number of classes on the ketogenic diet, traditional nourishing foods, and cooking classes.
The Healing Foods Method has been very successful from the very beginning, privately filling the program consistently until the recent release to the public.
