This is a Herbal Coffee and Cacao Nibs Mocha Chia Pudding!
Why? Because if you are experiencing adrenal fatigue like so many people are nowadays, caffeine might not be the best thing for you.
Me? Not only I used to have adrenal fatigue and had to be off caffeine in general, but I am also hypersensitive to it!
“Caffeine is metabolized by the liver using the enzyme CYP1A2. The ability to produce this enzyme is regulated by the CYP1A2 gene. Slight changes in the DNA sequence of this gene determine how efficiently a person can metabolize caffeine and thus eliminate it from the body.¹
Some people genetically produce very little of this enzyme while others produce a large amount. The majority of humans are somewhere in the middle.” (source)
I figured I am at the top of the list of who does not produce that CYP1A2!
Using herbal coffee instead
Herbal coffee can be pretty much as tasty as the real deal!

- 2 tbs herbal coffee
- ⅓ cup (55 gr) dry chia seeds
- ⅓ cup coconut cream - undiluted
- 1 tbsorganic vanilla extract
- 1 tbs Swerve
- 2 tbs (15 gr) Cacao nibs
- Brew a strong herbal coffee simmering 2 tbs of herbal blend with 2 cups of water for 15 minutes or until liquid is reduced to about 1 cup.
- Strain the herbal coffee and blend in coconut cream, vanilla extract and swerve.
- Add chia seeds and cacao nibs and stir well all together.
- Place in serving containers and chill for minimum 30 minutes before serving.
- You can add some additional herbal coffee to the pudding when serving and sprinkle with few cacao nibs to decorate.

ABSOLUTELY!! Sometimes it’s even better the next day!!
