Hot and Smokey Keto Chocolate Truffles
Happy Valentine’s day, have some keto chocolate truffles!
Today I would like to share with you a truffle recipe that will be included in my fat bomb book.
These are fat bombs but also delicious truffles in their own right.
For this recipe I got inspired by the cacao concoctions of Tulum, home of the ancient Maya, who used to sometimes mix hot chilis into their chocolate.
Also being Valentine’s day in 2 days, I was hoping to dedicate them to all lovers in the world…hoping their love keeps a bit of spice even through the years.
- Serves: 9 servings
- Serving size: 1 truffle
- Calories: 75
- Fat: 6 gr -
- Carbohydrates: 0.69 gr Net -
- Protein: 1.3 gr -
- Ganache:
- 3 ounces unsweetened baking chocolate
- 1 fluid ounce heavy cream
- 1 tablespoon butter
- 2 tablespoons confectioners Swerve
- 2 drops stevia glycerite
- ½ teaspoon smoked chipotle powder
- Coating:
- 1teaspoon confectioners Swerve
- 2 teaspoons unsweetened cocoa powder
- ½ teaspoon smoked chipotle powder
- In a small double boiler saucepan (bain marie) melt the chocolate slowly strring.
- Add cream, butter, Swerve and chili powder to chocolate and mix well until incorporated.
- Remove from heat and keep stirring for about 10 seconds.
- Place saucepan in the refrigerator for about 1 hour, until the ganache has solidified.
- With the aid of a spoon scoop the ganache and form 9 little balls, you might want to wear plastic gloves to help the chocolate not stick to your hands.
- Roll ganache balls into the coating powder, making sure to only get a thin layer of it on the truffle.
- For best consistency keep refrigerated.
What please is swerve ?? Stevia
Its a sweetener made with erythritol, which is a sugar alcohol.
Can I make this dairy free using coconut milk or cream?
I would say….YES! Make sure it’s thick cream though!!
This looks awesome! I will make them this week. I have long since learned that in order to stay keto, I have to have just a little sweet during the day. I am lucky that the natural sweeteners don’t knock me out of ketosis. Thanks for sharing!
Did you shape them into hearts by hand or use a mould?
