Notes on the preparation of the recipe
This Keto Chocolate Ice Cream is full of good fats and nutrients, and it is Keto Paleo, so you can feed it to your family and kids, knowing you are giving them the healthiest sweet treat possible!
I do not like very sweet desserts, so I did not need to add stevia to the other sweetener, that is your choice based on personal preference.
Also I made this recipe for my nephew who is severely allergic to all nuts, but ok with coconut, so I used coconut milk in stead of almond milk and it was still great!
Another small change I made is to use the chocolate sauce recipe from the book instead of the cherry glaze used in the recipe.
Make sure the ice cream mix is very well blended before freezing it!

- ¾ cup plus 2 tbs coconut oil
- ½ cup unsweetened almond milk ( I used organiccoconut milkinstead )
- ¼ cup MCT oil (I use this one!)
- 4 large organic eggs
- 4 large organic egg yolks
- 1 vanilla bean split lengthwise and seeds scraped OR 1 tsp vanilla extract
- ¼ cup powdered erythriol OR I used ¼ cup confectioners Swerve
- 1 tsp stevia glycerite (I skipped this ingredient, too sweet for me)
- ¼ cup unsweetened cocoa powder
- ¼ tsp sea salt
- In a blender, place the coconut oil, almond or coconut milk, MCT oil, whole eggs, yolks, vanilla seeds, (or extract), erythriol or Swerve, stevia if you use it, cocoa powder and salt.
- Blend on high for about a minute until very smooth and creamy.
- Put in your ice cream maker and proceed following manufacturer's instructions.
- Serve with Chcocolate Sauce, recipe from The Ketogenic Cookbook, or with the original Cherry Glaze form the book as well.

I’ve finally been able to get my numbers to move down using keto!
Before starting this I had tried regular calorie counting, low-fat eating, exercise, and had nearly zero results.
I’d lose a few pounds the first week and then nothing would move. Not inches, not pounds, I spent 6 months exercising (usually weights) 2-3 hours a weeks and lost a whopping 5 pounds.
So frustrating!
Even with keto, the weight is coming off slower than I’d like, but at least it’s making a noticeable difference.

I actually follow a low carb eating plan, but it many ways it is the same as keto-adapted. I have been losing weight and feel good. I do enjoy Maria’s blog and also read The Nourished Caveman and receive e-mail from Jimmy. I gave away over 200 cookbooks and now my one shelf has Low carb cookbooks and my Kindle is loaded with Keto-adapted, low carb, and Paleo diet books. I was recently on vacation for three weeks and we were very busy! Up in the morning and running all day. I have been doing keto for several months and stayed low carb throughout the vacation. Near the end of the third week my husband was flagging (he is low carb but not as strict as I am ). But I found that I had a lot of energy still. And we are in our 60’s! I love this way of eating!!

I’m some what new to this woe but I have already found that I am able to do more then I could before and not as tired. I have fibro and eating low carb and gluten free has helped so much with the pain. I’ve also lost 46 lbs so far, have another 70 to lose. Would love the book to keep things going!
I have been on keto for about 3 months now, but really screwed up the first 2 months by eating cream and soft cheeses. I was getting bloated everyday and realized the dairy had to go. I was putting coconut milk in my coffee and realized it was making me bloated too. So sad! I hope someday I can atleast have coconut milk again. But now I am starting to feel better and enjoying a keto lifestyle. Your website is a great tool to make it easier and more enjoyable. Thank you!

I have had more stable blood sugars since eating a low carb keto lifestyle. I need to really delve in and lose more weight instead of indulging myself once in awhile. I find I am not missing old foods but I have a hard time in social situations still.
The Ketogenic lifestyle helps keep me healthy because I am prone to Diabetes type 2. Keeping low carb is the only way to control my weight, diabetes, blood pressure, cholesterol… It is also sustainable for me. I love it. Thank you for your great blog and recipes. 😉

Keto living has absolutely helped me on my journey to get healthier. No other style of eating has allowed me to be satisfied and happy the entire time I changed my eating habits. My husband and I started keto just recently after learning all the benefits proven by science and research. We are both fairly healthy people which makes this harder at times as we are really doing it for preventative reasons and not because we had current health problems. That being said it is hard to not be tempted to go back to grains that we often used for comfort or just as part of a social situation. I love to cook and have found it a little more difficult without my go to ingredients. I want to keep my husband happy and interested in the food we are eating and this cookbook would be a tremendous help !!!

I have cooked this 1-2 times per week since I learnt this recipe. Very tasty and well worth the time and effort. I didn’t have a sieve handy when I first made this dish and I can say first hand how crucial that step is. I had no idea how big of a difference that was going to make until I experienced both outcomes.King oyster mushrooms are a good substitute if you cant get fresh shitake. I also I like to throw some bok choi in at the last minute to add some green to the meal.This dish reminds me and my lady of our favourite vegan ramen place in japan.
