Avocado, Roasted Garlic & Bacon Dressing

Ingredients
  • 1 head of garlic
  • 2 slices of bacon
  • 2 medium avocados
  • 1 and ¼ cup fresh parsley, washed and trimmed
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons lime Juice
  • 1 tablespoon sea salt
  • 1 tablespoon melted bacon fat
  • 1 tablespoon avocado oil
  • 2 slices of bacon
Instructions
  1. Preheat oven to 350°F. Cut top ¼ inch off heads of garlic to expose cloves. Place garlic in small baking dish. Add oil and sprinkle with salt and pepper; toss to coat. Turn garlic cut side up. Cover tightly with aluminum foil. Bake until garlic skins are golden brown and cloves are tender, about 55 minutes. Cool. Squeeze garlic cloves from skins.
  2. At the same time place bacon strips on a cookie sheet and cook your bacon till slightly crispy (reserve the fat from the bacon)
  3. Once the garlic & bacon are done, put together all ingredients in a food processor or blender.
  4. Blend or process until creamy and smooth. It's ok to leave some chunky bits as well.
  5. Refrigerate in a covered mason jar in the refrigerator. This will keep for 3-4 days.
