Bluberry Coconut Puddin (With Dried Apricots)

This must be on of the world's easiest desserts....of course sugar- dairy- and grain free!
  1. Soak apricots in warm water for 20 minutes.
  2. Drain.
  3. Put all ingredients in the blender and mix on high speed until smooth.
  4. Pour into a bowl.
  5. Put in the fridge for 10 minutes.
  6. READY!
  7. Garnish with fresh, edible Borage flowers. Nasturtium flowers can be used too.
